- Prepare 1/4 tsp of white or black pepper.
- Prepare 1 of THEN FOR THE EGGS.
- Prepare 1 large of egg, beaten.
- Prepare 1/2 lb of ground chuck hamburger.
- Prepare 1/2 tsp of onion powder.
- It's 1/2 tsp of dried parsley.
- Prepare 1 pinch of of tarragon.
- You need 12 slice of of smoked bacon.
The version we made was for the smoker, however, I have also included instructions on how to cook these on the grill or in the oven. Armadillo Eggs ( my version) step by step
- cut peppers in half, lengthwise, and seed them..
- mix all ingredients of filling together, very well..
- fill each pepper half with filling mix and put back together..
- mix the egg into the ground beef, add onion powder, parsley, and tarragon and mold a small amount of the meat around each pepper..
- wrap each burger-pepper with a slice of bacon and secure with toothpicks.
- cook on a grill-smoker at 200°for one hour, or until the bacon is crip and the meat is brown.
An armadillo egg is a cheese-stuffed jalapeno, encased in sausage and grilled or smoked to barbecued perfection. The grilled version leaves the jalapeno inside much fresher, almost raw, with noticeable crunch, while the long, slow heat of smoking will soften the pepper and create a smoother bite with mellow heat. I fired up my Bradley Smoker for making these armadillo eggs and used hickory wood, but other wood like pecan, maple and apple would work great as well. The armadillo eggs took a good couple hours in the smoker. The outside was nice and browned and the cheese was just starting to bubble out of a couple of the eggs.
